OK so I have to confess I have an addiction.  My addiction is to chips.  I know it sounds odd but honestly put a bag of Doritos in front of me and it's nothing for me to finish the bag!  So one day (OK like the whole day) I was looking around on Pinterest and it was like fate microwave potato chips with  only 30 calories per serving!  Too good to be true I thought but alas they are amazing!  Now I did dip them in this Buttermilk Dressing which probably didn't help the calories but whose counting!

Ingredients
  • medium russet potato
  • parchment paper
  • salt
  • optional seasonings: chili powder, Creole seasoning, Old Bay seasoning, etc.
Instructions
  1. Using a mandolin or v-slicer, slice one medium russet potato (peeled, if you like) as thinly as possible, taking care that all slices are the same thickness. Line the turntable tray of your microwave with parchment paper and place the potato slices on it without overlapping. Salt lightly and sprinkle with your choice of seasonings.
  2. Microwave at full power–watching closely–until spots of brown begin to appear, about 4-6 minutes. Turn off the microwave for 1 minute. Microwave again at full power until the slices are golden brown. (Be very careful not to over-brown or they will taste burned.) Remove from the microwave and allow to cool. Repeat until all potato slices are cooked.

Do you have a random cup and saucer you can't part with?  Simply fill it with some smelly goods and place it in a room!  For this one I filled it with a crystal bouquet that I found at our local craft fair last year!  Not only does it add a touch of gorgeous to my bathroom but it also smells phenomenal!  Happy treats!

There are so many things I love about my local grocer, but one of my favorites by far are the bananas.  Now when I say this I mean they sell the overripe ones for $1.00 a pound!  So when I see that cart of bananas I am on my way to making a delicious loaf of banana bread!

Taco night is a serious tradition in our family.  Ever since I can remember we have had taco night with all the fixins'.  It's somewhat of a challenge who can eat the most, or how high you can stack your taco and how full you make make your burrito without breaking them.  My favorite ingredient is my Mom's guacamole.  Most of the time it barely makes it to the table!  I finally got the recipe and I am going to share it with you!

Guacamole:
4 Medium Avocados
1 Teaspoon Worcestershire
1/2 Teaspoon Chili Powder
Pinch of Garlic Powder
1/2 Teaspoon Lemon Juice
2 Heaping Tablespoons of Sour Cream

Scoop out the Avocados and mash them up and them add all the ingredients and mix!  I add onion if I am making a dip and I don't add them if we are using it for tacos!  Happy Treats!

This cake was definitely an adventure not so much the making of it but putting it together.  I made this cake this weekend for my Mom's birthday.  Imagine me making icing and 5 hungry hyenas standing around me....

I had a thought the other night that I needed to make a change and I need to get back on track with my fitness.  My yoga mat is in the permanent roll form, my running shoes are collecting dust and my dumbells? What dumbells?  oh you mean my paper weights well enough said.  I have decided to make a challenge with myself and with anyone who wants to participate.  Monday is the day that it all goes down!  I am going to get up in the am EARLY and do some good old fashioned cardio for about 20 minutes and so everyone can hold me to it I will be taking a picture with my phone of my date/time clock and posting it immediately to facebook!  So this is week one of my own personal fitness challenge!  Would you like to join me on the journey?  Take a picture of your date and time, a fitness machine and share it with me on facebook or just leave a comment about you workin' it out!   It doesn't have to be early just whenever you can fit it in!  Even if it's walking for ten minutes twice a week!  Let me know so we can encourage each other!  I've heard it is much easier to keep up with your goals if you have people around you encouraging you!  So let's help each other!  I've posted two workouts that I found on Pinterest that I am going to do this week!  Happy Treats!
