When I bake anything with Buttermilk it always seems like I have almost a whole pint left.  So I decided why would I bake and then throw out the rest?  Instead I found a recipe for Buttermilk Dressing.  Now it may go bad pretty fast but trust me once you taste it you'll want to eat it on everything for a week!  Here's the recipe I use for my dressing:

ingredients
  • 3/4 cup buttermilk
  • 1/2 cup mayonnaise, light mayonnaise, or salad dressing
  • 1 tablespoon snipped fresh Italian parsley or 1 teaspoon dried parsley, crushed
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon dry mustard
  • 1/4 teaspoon black pepper
  • 1 clove garlic, minced
  • Buttermilk (optional)
directions

1.In a small bowl stir together the 3/4 cup buttermilk, the mayonnaise, parsley, onion powder, mustard, pepper, and garlic. If necessary, add additional buttermilk until dressing reaches desired consistency.

2.Cover and chill dressing for 30 minutes before serving. Cover and store in the refrigerator for up to 1 week. Stir or shake well before using.

3.Makes 1-1/4 cups.

I was reading up on buttermilk the other day for a baking project. It turns out you can actually make your own batch of buttermilk with a little vinegar! i am trying it today in my red velvet cake, so I'll let you know how it goes! :)
