Avacado + Egg + Oven = Breakfast?

When you think of an avacado what do you think of?  Personally I think of the thing that costs me an arm and a leg anywhere I go to buy it but I am always willing to pay for it.  I absolutely LOVE avacado.  They are so rich and creamy without being too heavy.  I could just eat one by itself if it were just that perfect ripeness.  I am always on the hunt for a new way to eat an avacado because let's face it one can get bored with eating in a salad or taco or burrito or with cottage cheese or tuna or chicken salad or just plain.  Wait who am I kidding I can never get bored with these options but I am always up for something new!

One day I was on the ol' Pinterest and I came across something that perked my ears.  Bake your egg into an avacado.  At first this worried me.  I mean what would baking do to my precious avacado!?  The egg was none of my concern bake it, fry it, scramble it, it's still an egg but avacado this is new territory.  So one night (yes night is best to test breakfast) I got my two avacados and I decided to test this mystery recipe.  I took my avacados sliced them in half and spooned out enough of the center to fit a large size egg.  This was something I eye balled (I'll tell you right now I did not spoon out enough and I would use a medium size egg in the future).  Next I took a farm fresh egg (let's face it they are the best for pretty much everything and absolutely gorgeous to look at!) and put one in each half of avacado.
Now for the fun part! The seasoning.  So for mine I wanted to stay pretty standard so I kept with salt and pepper.  For my sweet I decided to mix things up and do salt, pepper and a little sriracha seasoning to give it a little kick.  
Now for the verdict: the size of your egg is what will determine your cook time so keep that in mind.  Cooking the avacado surprisingly gives it a new depth of flavor.  This is an incredibly rich breakfast dish so I would never eat this on a day I had to go to work because although the ingredients seem like they would be light they transform together.  Saying that it is absolutely DELICIOUS.  Next time: I would definitely season the avacado first with a little salt then put the egg on!

Baked Egg+Avacado
2 Avacados
4 Medium Eggs
Salt 
Pepper
Other seasonings if desired

1. Slice avacados in half remove pit
2. Remove layer of avacado and save for Guacamole!
3. Season avacado with salt add one egg to each avacado half
4. Season egg with salt, pepper and other seasonings if desired.
​5. Bake at 425 for 15 minutes or until egg is cooked
