Banana Pancakes
Ok my friends I asked what I should do with my very ripe bananas and  you all came back with some great ideas.  I will be making all of these things in the future I hope but this time I decided on banana pancakes.  I have a big love for breakfast so pancakes were fitting.  I suggest you start freezing your ripe bananas because you will want to make these all the time for a breakfast treat!  Happy Treats!Ingredients:
1 1/2 cup all-purpose flour
2 tablespoons sugar
2 1/2 teaspoons baking powder
1/4 teaspoon salt
1 small, very ripe banana, peeled and mashed
1 cup milk (I used skim)
2 eggs
1/2 teaspoon vanilla extract Directions:
1. In a medium bowl, stir together the flour, sugar, baking powder, and salt.
2. In a separate medium bowl, whisk together mashed banana, milk, eggs, and vanilla until thoroughly combined.
3. Fold wet mixture into dry ingredients until just combined. Do not over mix or your pancakes will be tough! The batter will be slightly lumpy.
4. Put butter into a skillet and fry up your pancakes as normal. (put about a third a cup of batter into pan, flip when batter is bubbly)
