Blueberry Lemon Muffins

OK my friends it is that time again! The time has come for this months Mom's Crazy Cooking Challenge.  So I will have to say I was so super excited to see the challenge for this month.  Not only was it for muffins which I love but blueberry muffins!  Oh my goodness I can't even tell you how happy I am when I have a nice warm muffin fresh out of the oven.  Alright enough about me and my obsession with sweets let's move on to the good stuff!

So I started my journey to find an awesome blueberry muffin on Pinterest of course.  And there it was I knew I found it as soon I as I saw the beautiful picture.  I clicked on it to find out more and it brought me to a fantastic website called Always With Butter.  I knew I was hooked from the moment I clicked.  Not only is the name of the site awesome but all of the recipes sound absolutely mouthwatering and the pictures are so beautiful I want to hang them in my house.  After I stalked and drooled over the Always With Butter site I finally started the amazing recipe for Blueberry Lemon Muffins.

First you will sift together your dry ingredients and whisk together the wet ingredients.

Add your blueberries and stir until just combined.

Fill your muffin pans 3/4 of the way full and add the topping.

You will then gently stir the wet ingredients into the dry.

Mix together your topping ingredients.

Bake and devour! Happy Treats!
Ingredients:

3 1/2 cups flour
1 1/2 cups sugar
4 1/2 tsp baking powder
1 tsp baking soda
2 cups buttermilk
1 stick butter, cooled and melted 
zest of 1 lemon
2 eggs
2 cups blueberries

Topping
3/4 cups flour
1/2 cup brown sugar
1 tsp cinnamon
1/4 tsp salt
1/2 stick butter, cold and cubed

Directions:
Preheat oven to 375. Line 2 (12 count) muffin tins with liners. Sift together flour, sugar, baking powder and baking soda. In a separate bowl whisk together buttermilk, butter, lemon zest and eggs. Gently stir into dry ingredients. Then fold in blueberries and mix until just combined. Fill muffin tins until 3/4 full. Combine all topping ingredients until you get a crumbly mixture. Sprinkle evenly among muffins. Bake for 20-25 minutes until golden brown.

Your blueberry muffins look wonderful! I love baking with buttermilk, don't you? It gives such a great flavor!
