Cheesy Baked Pasta with Spinach and Artichokes

OK first this recipe had me at spinach and artichokes THEN I saw that it took 25 minutes!  Oh my goodness cheesy spinach and artichoke goodness in 25 minutes it was unbelievable!  Read more to find out about this deliciousness.....

Ingredients
  • 8 ounces mezzi rigatoni or some other short pasta (1/2 box)
  • 1 14-ounce can artichoke hearts, rinsed and quartered
  • 1 9-ounce package frozen creamed spinach, thawed
  • 1/4 cup grated Parmesan (1 ounce)
  • 2 cups grated mozzarella (8 ounces)
  • black pepper
Directions
  1. Cook the pasta according to the package directions. Drain and return it to the pot.
  2. Add the artichoke hearts, spinach, Parmesan, 1 cup of the mozzarella, and ¼ teaspoon pepper to the pasta and toss to combine.
  3. Heat broiler. Transfer the pasta mixture to a shallow 2-quart (or 8-inch square) broilerproof baking dish. Sprinkle with the remaining cup of mozzarella.
  4. Broil until the cheese is browned in spots, 2 to 3 minutes.

So because it's what I do I changed a few things.  I used whole wheat pasta instead.  If you haven't tried whole wheat past you should, there is something about the texture and the taste is amazing!  I didn't use creamed spinach either I used normal and added about a half cup of skim milk.  I also added a couple tablespoons of garlic powder.  Oh yeah and I am a firm believer in the fact that you can never have too much cheese so I of course added more mozzarella.  Oh my goodness it turned out amazing and it was a HUGE hit in my house!  This is definitely on the keeper list of my go-to dishes!
