Here is another slow cooker recipe for you friends! This is perfect for a quick dinner. I threw this recipe together 10 minutes before work and came home to a delicious healthy meal. If you weren't in love with you slow cooker before you will be now! Happy treats!
3 frozen boneless skinless chicken breast
1 medium white onion thin sliced (I used 1 1/2 but we love onion in my house)
3-4 green pepper thin sliced
1 (16 oz.) can of kidney beans
1 can of Ro-Tel
1 packet taco seasoning or get creative and season yourself
soft taco shells
cheddar cheese, salsa and sour cream for topping
1. Put chicken breast, onion, green peppers, kidney beans, ro-tel and taco seasoning into slow cooker. Cover and cook on low 5-6 hours.
2. Remove chicken and shred (mine fell apart) then return to slow cooker.
3. Fill up your tortilla and enjoy!
