After that I decided it was my mission to find a fish taco recipe that I could make at home. Let's face I can't go out to eat all the time (as much as I may want). So I went to my favorite spot. Yes you guessed it Pinterest. I found a couple different recipes and tried them. I ended up coming up with a little something that fit exactly what I wanted out of my homemade fish tacos. To try to make them a little healthier I use Greek Yogurt for the lime cream and I also broil mine instead of frying. There is something about this recipe that tasted like you are having a taco but with the added benefit of using fish!
Another thing I LOVE about it is this meal takes me about 15 minutes to make. At the end of a long day I typically want my dinner to take less than 30 minutes to make and I am doing this one in half that! Fish Tacos 5 Tilapia fillets thawed 2 teaspoons Paprika 1/2 teaspoon Cayenne 1 teaspoon garlic powder 1 teaspoon ground Cumin Pam spray Slaw 1 bag of tri color cole slaw (plain no dressing or flavor) 2 green onions minced 1 clove of garlic minced 3 tablespoons distilled white vinegar 1 teaspoon Kosher salt 2 teaspoons white sugar Lime Cream 1/3 cup of Plain Fat Free Greek Yogurt 3 tablespoons mayonnaise (could use low fat) juice and zest of 1 lime salt to taste Tortillas Wheat or Flour both taste great 1. Turn your oven to broil. Mix all the spices for tacos together and sprinkle evenly on each fish fillet. 2. Pam a pan you can use with your broiler and put into over for 5 minutes, then flip and cook 5 more minutes. 3. While your fillets are cooking throw all the slaw ingredients into a large bowl and toss. 4. Put all lime cream ingredients into a bowl and mix. 5. Build your tacos and enjoy!
