So I was definitely craving some good fish! I needed something quick, one dish and I wanted it to be healthy! This so hit the spot and it is very healthy which is a bonus it will help combat all the cake pops. Check out the recipe I used! 1/2 cup Original Bisquick® or Bisquick Heart Smart® mix
1/2 cup yellow cornmeal 1 teaspoon dried oregano leaves 1/2 teaspoon salt 1 to 1 1/2 lb fish fillets 1/2 cup Fat Free plain yogurt (from 32-oz container) 1 medium zucchini, cut into 1-inch pieces (1 1/2 cups) 1 medium red onion, cut into wedges 1 medium red bell pepper, cut into 8-inch pieces 1 tablespoon olive or vegetable oil 1/2 teaspoon lemon-pepper seasoning salt
recipe from Betty Crocker So I can honestly say I would not change a thing about this recipe! Except I left out the red peppers but only because I do not like them. Next time I also won't forget cornmeal! Eeep! Happy Treats!
