It is that time again! Time for the Crazy Cooking Challenge. I was really excited about this month when I heard we were doing Grilled Cheese. It's such a classic and pretty much everyone has a memory of a Grilled Cheese I bet. I can remember growing up and having them with tomato soup. This was a specialty of my Dad's and somehow they are never as delicious as when I was a kid eating them at the breakfast bar with my Dad. I will have to say this one definitely takes a close second. When I saw Spinach and Artichoke Grilled Cheese I knew I found the recipe.
1 tablespoon softened butter
1 tablespoon olive oil
2 slices of wheat bread
½ cup shredded mozzarella cheese
2 handfuls spinach sauteed in butter with half clove finely minced garlic
chopped marinated artichokes
Heat 1 tablespoon olive oil and 1 tablespoon butter in a frying pan over medium low heat. Place 2 slices of bread in pan, then pile half of shredded cheese on one slice and half of shredded cheese on the other slice. Cook the bread until golden brown and the cheese is melted.
Remove the grilled bread from the pan. Place sauteed spinach on melted cheese on one slice of bread. Arrange marinated artichokes on top. Put the other slice of bread on top and devour!
