Zucchini Boats

First off I am happy to announce that I have a subscribe now link for A Little Treat posts! So pretty please click the link on the right that says "Subscribe to A Little Treat" to keep up with all my new blog posts!  And now for the good stuff......So this was actually something I had put together last summer.  I have been wanting to do a post on it for some time.  Now that we are a couple months into the new year and spring is right around the corner I thought now was as good a time as any.  This was a bit of a collaboration between myself, my sweet and our good friend Todd.  We all had decided to try our hands at gardening.  Now I will have to say I have the opposite of a green thumb.  As in my mom told me once to buy Hostas for landscaping in front of my home because there is no way I could kill them.  Well guess what my friends....I killed them.  Those poor innocent Hostas never saw it coming.  I still feel guilty.  I would like to blame the insanely hot Missouri summer combined with the crazy drought we had but, let's face it I did not give them the care I should have.  Anyways moving on......
So I was so excited when the three of us decided to try these out.  Todd was growing Zucchini in his garden and upon his research for recipes he came across Zucchini Boats.  Out of nowhere I had text after text of beautiful mouthwatering photos of Zucchini Boats.  So we made a date and the picture above happened.  I am proud to say that all vegetables are garden fresh and grown organically by my sweet and Todd (I helped slightly by singing off-key and dancing off-beat to the garden while my sweet did the actual work).  

Ingredients:
Anything fresh! We used Zucchini, Yellow and Red Bell Peppers and Tomatoes
For our non-fresh ingredients we used olive oil, marinara, Italian seasoning, pepperoni and parmesan cheese
First you will need to hollow out the Zucchini.  We just used a spoon for this and you just want to hollow out the seeds down to the meat of the Zucchini.
Then we covered half with a drizzle of olive oil and half with marinara.
On the olive oil half we put bell pepper slivers, tomatoes, sprinkled with parmesan cheese and some Italian seasoning.
On the marinara half we put pepperonis, parmesan cheese and Italian seasoning.
Use a flat baking sheet, I covered mine in foil and them sprayed with Pam cooking spray.
Preheat oven to 400 degrees and bake for 20-25 minutes.
Cook until the Zucchini is tender.  Some of our Zucchini was HUGE so we had to cook for a little bit longer I suggest keeping an eye on them depending on the size and testing throughout cook time.
